Tomatensalade met Perzische worteldressing en toast op een zilveren dienblad.

Tomato salad with Carrot Wonder dressing

Who says simple is boring?!. The combination of colorful cherry tomatoes, pomegranate seeds and a fresh, sweet dressing with Wortel Wonder makes this simple salad a real treat. Perfect for a light lunch or as a colorful side dish. Ready in no time, and there's hardly any washing up. Delicious, right?

What you need:

For 2 people

  • 300 g cherry tomatoes in different colors
  • Half a red onion, thinly sliced into rings
  • A few finely chopped parsley leaves
  • 1 tablespoon pomegranate seeds

For the dressing:

  • 1 tbsp Wortel Wonder
  • 1 tbsp white wine vinegar
  • 2.5 tbsp extra virgin olive oil
  • Pinch of salt & pepper
  • (optional) 1 tsp lemon juice for extra freshness

 How to make it:

  1. Make the dressing
Mix Wortel Wonder, vinegar, olive oil, salt, pepper (and lemon juice if using) in a small bowl. Whisk until combined.
  2. Prepare the tomatoes and onion
Cut the cherry tomatoes in half and place them in a bowl. Slice the red onion into thin rings and add them to the bowl. Sprinkle with a pinch of salt and pepper.
  3. Assemble
Generously drizzle the salad with the Wortel Wonder dressing.
  4. Finish
Sprinkle over the pomegranate seeds and garnish with the parsley.
  5. Serve
Serve as a fresh salad with grilled vegetables, fish or bread.

Tip: For extra depth, let the cherry tomatoes sit with a little salt at room temperature for 15 minutes first, so their juices are released. This mixes wonderfully with the dressing.
